Maid Simple: Dinner for Friends

Oh, hey! It's Monday which means another installment of Maid Simple. I'm going to go a little off the charts this week and give you a recipe. Not just one recipe, though. A whole meal's worth of recipes. This is the perfect meal to make for dinner guests; it's fairly quick, which will afford you the luxury of actually being able to join in the pre-meal conversation with your guests. It's also very tasty, healthy to a moderate degree, and SIMPLE.

About four hours before dinner time (or first thing in the morning, if you have other things to do that day) throw all of this into a crock pot on high.
1 lb browned turkey
1 can kidney beans
2 cans chili beans
1 can diced green chilies
1/2 bag frozen corn
1 packet taco seasoning
1/2 packet ranch seasoning
After an hour, turn it down to low until serving time. *recipe courtesy of A. Perry


One hour before dinner time throw these tasty (and clean!) corn muffins together.
1 1/3 c whole wheat flour
1 1/3 c cornmeal
1/3 c milk powder
2 tbsp Sucanat
2 tsp baking poder
2 tsp baking soda
1 tsp sea salt
Mix in order given, set aside.
Mix together the following in a separate bowl.
1/2 c unsweetened applesauce
2 c skim milk soured with 2 tbsp lemon juice
2 tbsp canola oil
4 beaten egg whites
Add wet ingredients to dry and mix just until dry ingredients are moistened. Fill each muffin cup 2/3 full. Bake 35-45 minutes or until golden on top.


Just before your guests arrive, lay out an array of delicious crudités for you and your guests to snack on while the corn muffins finish baking.

I love taco soup! My friend Olivia makes the best and she actually just made it yesterday for our superbowl party. If you aren't worried about the extra fat, a dollop of sour cream and some cheese sprinkled on top of your bowl makes it amaaazing! She also makes corn bread but some people actually use tortilla chips too
